This is something I’ve been playing with for quite sometime now. One thing that I always loved growing up was great BBQ sauce. Since I switched to this eating style, it’s been tough to find anything decent that doesn’t contain a bunch of sugars and other junk in it. I think I’ve finally got the hang of this simple yet flavorful BBQ sauce. The key ingredient it turns out, is hickory liquid smoke. I don’t know why I never bothered to check the label of liquid smoke before but I guess I just assumed it was chock full of artificial flavorings and other junk. But when I looked, it was nothing but water and hickory smoke concentrate…sweet! This is perfect timing really since here in California, it’s the start of grilling weather. I can’t wait to use this sauce on my grill this year!
- Add onions and lard to a large saucepan on medium low heat. Season with salt and pepper and carmelize, about 20-30 minutes. The longer you carmelize, the sweeter the sauce will be and the less added sweetener you’ll need.
- Add garlic and sauté until just beginning to brown, about 5 minutes.
- Add tomatoes, smoked paprika, honey, coconut aminos, and apple cider vinegar and let come to a simmer.
- Fold in tomato paste and liquid smoke
- Turn heat down to low, cover and let simmer for at least 60 minutes but up to 4 hours
- Transfer to a blender and blend until smooth
