Chocolate Chip Pumpkin Bites

Paleo f(x)

Fall is here and that means pumpkin everything – taking a cue from our pal George of Civilized Caveman, I attempted to paleoify an old favorite:  the pumpkin chocolate chip cookie. These little guys are so delicious that it’s hard to eat just one. But remember, a treat – paleo or not – is still a treat. These are perfect for your fall gatherings, parties; share them with your family & friends.

Mix-Ins
Instructions
  1. Preheat oven to 350° F.
  2. In a stand mixer, cream together wet ingredients. The palm shortening will not completely bind, which is normal.
  3. Sift together dry ingredients in a separate bowl.
  4. Using ½ cup at a time, add dry ingredients to the wet batter and continue mixing. The batter will turn very dense.
  5. Once all of the flour mixture is combined into the wet batter, add in the chocolate chips. If adding walnuts, add them in here.
  6. Spoon batter onto a greased cookie sheet and bake for 15 minutes. Let cool & enjoy.

  1. Love this recipe! Will be linking back to this in my upcoming post :)

  2. Do these cookies turn out cakey? Or more chewy like a traditional chocolate chip cookie? Lots of eggs.

  1. [...] Lately I’ve been utilizing a lot of fall and winter vegetables in my cooking.  I love this time of year and last year I wrote about how much I love chili around this time as well.  The inspiration for this recipe comes from my old chili recipe and my friend George at Civilized Caveman since he makes pumpkin everything.  I figured with all the pumpkin recipes out there, why not try to make a pumpkin chili one?  Turns out, I just had to make a few minor tweaks to my previous chili recipe and it turned out amazing.  I woke up this morning to the most delicious smell, I can only describe it as ‘holiday magic’.  This would make an ideal lunch or dinner on a cold fall or winter day.  If you’re so inclined, treat yourself afterwards with some Chocolate Chip Pumpkin Bites. That’s because it captures the essence of pumpkin flavor and mixes it with the timeless yum of chocolate chip cookies. Great from October through December or any time in between, these cookies have gotten rid of general purpose flour and are using coconut flour to get the job done. They also have plenty of Paleo approved ingredients like pumpkin puree and an assortment of spices and seasonings. When it’s all done you’ll be amazed that you made these from scratch. [...]
