Chocolate Avocado Mousse

A restaurant that I attend on a regular basis sometimes serves a whipped avocado topping for their amazing burgers.  The texture is just so light and creamy much like a mousse so I figured, why not add some cacao powder and some other goodies to a whipped avocado and try to make a great mousse with plenty of good fats and minimal sugars?  After experimenting in the kitchen on a few different tries, I finally nailed it and this was the result.  What’s even more amazing, is how simple it really is.  You might want to double the recipe because it’s so tasty.  ;)

Serves: 2

Instructions
  1. Combine all ingredients in a food processor and blend until desired consistency is reached, stopping every couple minutes to scrape down the sides
  2. Serve immediately or chill for a few hours to allow mousse to set up
  3. Enjoy

Notes
If you are on a program such as The 21 Day Sugar Detox and you are limiting even natural sweeteners, you can substitute out the coconut nectar for a green tipped banana.
